Wagyu bottom sirloin flap, also known as beef bavette, is very versatile and can be grilled or broiled, cut into steaks or used in stir-fries. It also makes a killer steak sandwich. But remember to slice on a 30-degree angle across the grain when serving. It’s a great intro to the Wagyu beef experience. It also has the added entertainment of seeing how people react when you invite them over to chow down on some flap.
